Guest guest Posted April 27, 2005 Report Share Posted April 27, 2005 Does anybody know of a source that is selling raw almonds which explicitly states that they are un-pasteurized on the bin (at a local store) or on the web page (on the internet)? California, which is where most of the almonds come from, passed a law about requiring almonds to be pasteurized in hot water. I don't know how comprehensive this law is. When I soak the almonds I've been buying locally from a " raw " bin, they don't seem to have as much tannin in them as they used to. Pasteurizing them in hot water would take a lot of the tannin out of the skins. So now I'm concerned that I'm not getting raw almonds anymore. I don't have the strength right now to launch an awareness campaign to try to educate the retailers about the importance of: Labeling the " raw " bins " pasteurized " or " un-pasteurized " . Providing un-pasteurized, truly raw, almonds, so people get the full value of the original nutrition. If we can get un-pasteurized cows milk, we should be able to get un-pasteurized almonds. After all, the only reason the law was passed is because some people got sick from eating almonds, from a disease that could only come from contamination from livestock. So if you can do clean cow's milk, it should be much easier to do clean almonds. Normally this is what I would do, but I just can't do it right now, so I'm hoping there is a retailer, somewhere, who is selling organic raw, un-pasteurized almonds.
