the Raw Foods Festival, but we've printed more since,

uncookbook: The Art of Raw. SmartMonkey Foods founders

and co-authors Ani Phyo and Ede Schweizer have

compiled over 25 of their most popular recipes for

healthy, natural, uncooked dishes to tempt the palates

of raw food followers and traditional cooks alike.

Schweizer, a photographer and book designer, and Phyo,

a former multimedia designer, created their

self-published book with an eye for both usability and

style. In one color, Schweizer‚s exquisite photos

showcase the natural beauty of food prepared and

served at its freshest.

 

Phyo and Schweizer authored The Art of Raw in response

to growing requests from customers and students for a

book of their most popular recipes. Because most

SmartMonkey Foods customers lead busy lives ˆ from

business people who travel often to parents with young

children ˆ The Art of Raw includes a wealth of

easy-to-prepare, simple yet delicious recipes. Phyo

and Schweizer know that while today‚s health-conscious

professionals and families want to eat fresh, organic,

exceptionally flavorful foods, they don‚t have time to

fuss with lengthy dehydration, sprouting, or a laundry

list of exotic ingredients. That‚s why every recipe in

The Art of Raw can be prepared using only a blender or

The first printing of The Art of Raw ˆ which Phyo and

Schweizer created by hand ˆ sold out during the

weekend-long International Raw and Living Foods

Festival in August 2004. A second run is now

available. Future editions will include information

about the raw lifestyle and philosophy; nutritional

information about eating raw; and details of the

authors‚ backgrounds as designers, artists, raw-food

enthusiasts, and chefs.

 

A sampling of SmartMonkey Foods most popular dishes,

this debut edition includes recipes for three main

course entrees (Stuffed Anaheim Chiles, Flaxseed

Pizza, and Italian Herb Collard Rolls); three soups

(Gazpacho, Garlic Walnut, and Creamy Portabella); five

dressings, (Orange-Cucumber, Caesar, Curry, Confetti

Salad, and Spring Herbs); four cheezes (Italian Pizza,

Black Pepper, Sun-dried Tomato, and Dill); four drinks

(Bluesmoothie, Mango Lassi, Carob Brazil Milkshake,

and Almond Nog); three sides (Coconut Chutney, Walnut

Cranberry Squash „Rice,‰ and Thai-style Cucumbers);

and one raw dog-food recipe, a favorite of Phyo and

Schweizer‚s canine companion Kanga (Kanga‚s Favorite

Pate).

 

In order to preserve food‚s natural enzymes ˆ which

are essential to proper digestion and good health ˆ

SmartMonkey Foods recipes are never heated above 104

degrees. The ingredients are always fresh, organic,

catered a birthday party for the cast of Stomp,

shipping festive treats across the country for the

event. When Carnival Cruises decided to test raw

cuisine on a Caribbean cruise that same year,

SmartMonkey Foods developed a living foods menu worthy
