Some think the living kefir grains are the original mana. They grow and people pass them on and have handed them down through the ages. I believe they have been mostly used in goats milk throughout the ages (but cows milk works too). The grains change the milk to something very digestible with high amounts of probiotics and remove lactose. I can just imagine Abraham traveling in ancient times with his large family and all their goats. They middle easterners still hang a bag of kefir in the door of their tents and visitors punch the bag a bit as they come and go. It helps the culture to swirl the jar a couple of times a day. There is no other work involved besides putting in room temp milk. The grains will culture other mediums but need to go back in milk to thrive and grow. I sometimes put mine in coconut milk.
