I say mostly because the nuts I eat are not raw. My diet is as follows. Most mornings I have a smoothie with ground almonds, (raw,blanched), water,bananas, berries and flax oil. During the day I eat fruit and some nut butter or nuts. Many nights I eat a salad with lettuce avocado, cabblage, carrot, sprouts cucumber etc. This is not the first time I have been raw, but it has been a long time. I started this way of eating because I was scheduled for surgery for cancer on my nose. I felt so sick all the time I did not think I would be able to withstand the surgery. I started eating raw food one month before the event. I immediately felt better. Since starting this diet I have experienced the following changes: Dropped 12 pounds and still losing. Before this diet, most days of my life I felt nauseous, dizzy and headachey. Now I don't Last year I got a cold and it turned to pneumonia and I was down for three months. This time a got a cold and it lasted three days. (I took an herbal formula to help) One month after starting this diet I had a bllod test. Cholesterol: down. from 230 to 200 Blood pressure down to 120/80 from slightly higher. I expect both are even lower now. I used to suffer terrible migraines. Now I don't. I still have mild headaches but that is all. Because I am house bound until I finish my series of surgeries on my nose, I cannot walk, but plan to as soon as this is over. I expect then to feel even better. Lastly, I have not purchased any equipment. I have a blender and use it for my morning smoothies, which I look forward to with joy each day. I do not want a dehydrator. I am eating this food partially because of it's high water content. I do not want to take that away. Can enzymes live with no water? It doesn't seem logical. Therefore I will continue to eat food in it's natural state for now. I would be interested in making raw nut butter at some point, but for now I don't have the knowledge or equipment. I do not feel hungry on this diet. I feel satisfied and happy with it. I sometimes think how delicious certain cooked foods would be, but I remind myself that I feel well and also sated with this raw food. I have not decided to be raw for good, but for now I see no reason to stop.Originally I wanted to do this for a couple of months to get through surgery. I thought it would be very difficult. But it as been completely easy and pleasant. I can't imagine going back to feeling lousy all the time. Thank you all for your posts which I have been reading with interest. About Dehydrating--I've had questions about that, too. It was helpful while I was transitioning, and now and then I still use it for 'treats,' but most of my food is much more simple and basic now.
