It is taken from trees and is unprocessed but it must say pure and have no added ingredients! To become syrup, you have to boil 30 to 40 gallons of maple sap for severl hours to produce one gallon of syrup. Maple sap, when raw, is clear like water, and nearly flavorless. When I was transitioning to raw foods, I used it periodically when making vegan desserts, but now use it rarely, if at all.
