If You Have An Alkaline Stomach: Fruits should only be eaten when they are ripe, because their sugars have not formed completely and therefore will have an acid reaction in the system. Ripe fruit, although apparently acid to the taste, has an alkaline reaction in the body, thus interfering with natural digestion. If You Have An Acid Stomach: It is extremely important to bear in mind that if refined sugar of any kind, or any flour product is eaten during the same meal with fruits (except bananas, dates, figs or raisins) either together or within an hour or two, the sugars and starches will have a tendency to ferment in the digestive tract, causing an acidulated condition of the stomach. The digestive system is not easily explained however I would strongly suggest getting the book Prescription for Nutritional Healing by Balch and Balch. Taking one statement and trying to figure out the meaning is best when you have all the information in hand. I believe enzymes at work are the key to Dr. Walkers statement along with the word RIPE. The digestive system breaks down food into simple components that can be readily absorbed, and these are then reconstituted into the various components of the body. All vegetables, especially raw vegetables, balance the acidity and alkali levels in the blood. Although it might seem that citrus fruits would have an acidifying effect on the body, the citric acid they contain actually has an alkalinizing effect in the system. I understand the basic rule of thumb in maintaining pH balance is to eat 80 percent alkaline-forming foods and 20 percent acid-forming foods daily, a perfect blood chemistry! I always include a lemon to my gallon of pure water daily with a tablespoon of organic apple cider vinegar. My pH level is good!
