I notice a lot of the recipees call for a food dehydrator for pizza crusts etc. Just wondering why dehydrate food if the aim is raw food? But my understanding is that a dehydrator doesn't kill the enzymes in the food because it heats lower that 110. By using raw ingredients in a dehydrator, one can make crackers etc., that are still essentially raw. I've ordered a dehydrator. Am looking forward to trying some of the munchie recipes, as well as some of the 'entree' type ones. But in answer to the question why use a dehydrator, my take on it is that we increase the repertoire of recipes, otherwise, thinks like crackers would be impossible, as well as the plethora of other dishes made via a dehydrator. My problem is that I'm always hungry and I'm hoping the dehydrator will increase my menu so I can eat often and more varied throughout the day. Probably the main reason is because transitioning to a raw food diet isn't easy as we are all used to crazy concoctions like pizza, souffles, casseroles, etc. So using dehydrated foods gives many more recipe options to help us make the transition. And of course you could say the same thing about salads...why not just eat one fruit/veggie at a time? Also, when food is in season, some people dehydrate to preserve the food because the quality of even dehydrated in-season food is much better than the cardboard junk that you get when it's out of season. And I agree - I can't wait to try out cracker recipes ... munchies. I know it will be great to sit down to some yummy borscht and have a handful of crackers to go with it! I had made beef jerky for my daughter but it bothered me that altho the meat became dehydrated it had never reached a high enuf temperature to kill organisms.
