I would totally appreciate recipes from anyone in the group. I've got a

fantastic selection of books, but I find that book recipes can be hit

and miss. You never know which ones are the best. I think

reccomendations are the ideal way to go.

 

To start, I'll even share one of my standbys:

 

Coconut Cream

 

* for the times you're craving something sweet

 

1 coconut

2 T cold-pressed walnut oil

1 vanilla bean (or vanilla extract, not raw!)

4-6 dates, soaked in water

date soak water or coconut water

 

Chop up the coconut into 1 " chunks. Pop in blender or food processor

with walnut oil, vanilla, soaked dates and a bit of water.

Blend/process adding water a teaspoon at a time until cream reaches

desired consistency and all lumps are gone. If you add a bit too much

water, it's okay, it'll solidify a bit in the fridge. The cream keeps

in the fridge for just under a week.

 

I modified this from a recipe by Renee Loux Underkoffler in ''Living

Cuisine, The Art and Spirit of Raw Foods''. The original used coconut

oil, but I find the walnut oil just adds this amazing flavour to the

cream.

 

A spoon or two is all I need when I'm craving something sweet or fatty

or am tempted to eat something cooked.
