Hi Valerie,

 

Note this first one looks like it is for a big batch, you might want to cut it

in half:

 

----------------- CHILLI AND LIME MARINADE ----------------

4 x Limes, Juice of

6 tbl Olive oil

1 x Green chilli, seeded and sliced, or chilli powder to taste

1 tbl Chopped fresh coriander

1 tsp Cayenne pepper

 

Or

 

SPICY SWEET POTATO CHIPS

(adapted from Martha Stewart)

 

2 medium sweet potatoes, peeled and then cut into home-style French-fry size

wedges

 

Mix thoroughly in a small bowl

3 Tbl. olive oil (add an additional tablespoon if you have larger sweet

potatoes, or you will run out of marinade)

1 Tbl. ground cumin

1/2 tsp. hot paprika

1/4 tsp. ground cayanne pepper (also called " ground red pepper " )

1 tsp. ground ginger

1/4 tsp. salt

 

Coat the sweet potato wedges with the oil-spice mixture. Place in dehyrator.

 

Squeeze juice of 1/2 lime over them just before serving.

 

If you find this too spicy, adjust spice downwards.

 

OR

 

SPICY SWEET POTATO " CHIPS "

 

1 pound sweet potato(es), ready-to-dehydrate weight

1 1/2 tablespoons oil (0.8 oz.wt.)

1/4 teaspoon cumin

1/8 teaspoon cayenne or more or less if wanted

1/4 teaspoon salt

Freshly ground black pepper

 

Scrub and dry sweet potatoes.

Cut off pointed ends of sweet potatoes. Peel potatoes with a

vegetable peeler or knife, then cut crosswise into 1/8-inch-thick slices.

 

Stir in seasonings into oil. Coat sweet potato slices by turn each over

gently to coat with the oil mixture. Dehydrate, until " chips " are dried to your

liking.

 

Serves 2
