Guest guest Posted May 13, 2004 Report Share Posted May 13, 2004 This recipe for corn tortillas is from Cherie Soria (Angel Foods). Perhaps if dehydrated for longer it would make good chips. FRESH CORN TORTILLAS Recipe by Cherie Soria Makes 1 dozen tortillas 4 cups yellow bell peppers, seeds removed 6 ears of corn, kernels only 1 medium zucchini, peeled, chopped 1 avocado, peeled, seeded and mashed 1 1/2 tablespoons nutritional yeast (optional) 1 tablespoon lemon juice 1/2 teaspoon Celtic sea salt 3 tablespoons ground psyllium husks Directions: 1. In a blender, puree the peppers, corn, and zucchini together until smooth. Add avocado and puree again. While blender is still turning, add psyllium and blend well. 2. Pour 1/2 cup of mixture onto a dehydrator tray lined with a non- stick (Teflex) sheet and form flat disks about 7 inches in diameter, using a flat rubber spatula. (One full-size Excalibur dehydrator sheet will hold 4 tortillas.) 3. Dehydrate at 110 degrees for 6 to 7 hours. After 3-4 hours, turn the tortillas over and remove the non-stick sheet. If possible, put a mesh (not Teflex) drier sheet on top, to keep the edges of the wraps from curling up as they dehydrate. 4. Continue drying until dry, yet flexible. 5. Store in a closed container in the refrigerator for up to 2 weeks or freeze for up to 2 months.
