I split them into 3 sections lengthwise by sticking my index finger into the point at either end and then running it carefully down. This usually splits off one of the 1/3's and then I can just break apart the other 2/3's the banana is normally sectioned into 3 pieces lengthwise, like there are sections in an orange, but in the banana, they are not as distinct. Be sure to dehydrate at a very low temperature. I do it at 95.
