Rainbow Green first week

Our little rotating dinner co-op completed its first week (mon-thurs)

and wow, what a raging sucess it was. The food, all from Cousens'

Rainbow Green Cuisine book was just outstanding.

 

On Mon we had (as I said before) Wilted Kale Salad, Tomato Pinenut

Soup, and flaxseed crackers with pumpkin seed pate'. (Some were

STILL raving about this soup on Thurs)

 

On Tues we had Curried Carrot soup, a generic green salad, and

crackers with a nut hummus. (he said he substituted some of the nuts

with what he had on hand) These were good, I'd certainly enjoy them

again.

 

On Wed, we had spaghetti sauce with nut cheese and the neatballs over

jicama noodles. The neatballs were VERY salty when eaten alone, but

good when combined with noodles and sauce. The chef that nite also

said she would use 1/2 the oil the recipe called for. I loved this

dinner.

 

On Thurs we had the sesame cole slaw which was really yummy, but for

the sesame oil, she used toasted sesame and I'm not sure that is the

right kind, but the flavor was awesome. She also served mashed

taters and this is the second time I've had that one. Both times I

was astounded it had cauliflower in it. I'd like to eat this pretty

often.

 

We all agree that the recipes just have too much salt in them, so

whenever there is salt, we are going to use 1/2 the amount for a

while and see if that tastes better to us. We are all excited about

this experiment and about the food. It has been soooooooo good and I

love not having to struggle with the menu every day and I like not

having to clean up my kitchen because it stays so clean when I don't

use it. :0) We have also decided to extend our group a little bit,

so we fix one additional portion of each thing and take it to a

member of our raw-food support group who has really messed up her

foot and ankle and can't stand long enough to prepare her own food.

That way she also gets a good dinner 4 nites a week because no one in

her family will fix her food for her. (what's a support group for,

anyway?) ;o)

 

This really has been a fun week foodwise and I don't think I've ever

thought that in the 2 years I've been trying to transition to this

raw-food life-style.
