Guest guest Posted April 3, 2004 Report Share Posted April 3, 2004 Megan, I know I have a recipe somewhere but cannot find it...here's what I would do... take carrot pulp, mix with minced garlic, dulse(or kelp), a touch of dill and a bit of sunseed yogurt or olive oil. Let sit overnight for the flavors to mingle and then form into croquettes for serving. They would look nice on a romaine leaf.
