GOOD Raw live SOY comes in 3 forms, all the rest including fermented soy sauce [salty] is suspect. The Three good forms of soy are: Miso. Tempe and Sprouted soy beans. Sprouts can be nibbled at raw or tossed into a salad. Miso* can be dissolved in cold water if you shake it lots or even run it through a blender for a few moments. As long as you don't cook the miso it is wonderful base for soups, sauces and gravies and such. However, I've never found a tasty way to eat tempe, if anyone can suggest some dishes I like to try some. *Try this miso soup. One Tablespoonful of miso dissolved in one cup of water with a finely diced up scallion and a few specks of raw sweet pepper, diced finely and tossed into the soup. Some shredded sea vegetables or cabbage leaf adds a nice touch.
