Moreover a lot of vegetables from shops are grown in dead soil and the fruit is hugely sprayed before being put in a gas chamber for ripening. Tofu is fermented. Fermented is not raw. There are different solutions for each area. I can tell you about Brussels but others in the forum will have better counsel for your area. For me it is relatively easy as I simply visit the main fruit and vegetable market and buy from the lorries that come mostly from southern Europe and North Africa. Guest guest Posted March 22, 2004 Report Share Posted March 22, 2004 Tofu isn't fermented, but it isn't raw. It is made out of soymilk, which is cooked, and then coagulated similar to cheese. I like raw tofu -- I put grated ginger and a tiny bit of soy sauce and a really tiny amount of sesame oil on top.
