Corn chips

6 ears corn removed from the cob

1/2 yellow onion

2 C Sunflower seeds, soaked 6 hours and rinsed

1/4 C water

2 tsp Celtic salt

1 tsp kelp powder

 

Process corn and onion in a food processor. Add sunflower seeds, and

process until mixture is well blended and the consistency of batter. Add

some water if mix is too thick. Add salt and kelp and mix well. Form into

flat rounds 1/8 in. thick and 1 1`/2 inl wide. Place on teflex

sheets. Dehydrate @ 105 degrees for 12 hours, turn chips over, and remove

teflex trays. Continue dehydrating for 10 to 1`2 hours, or until desired

crispness is obtained.

 

Salsa

4 firm tomatoes, finely chopped

1 red bell pepper, finely chopped

1 yellow onion, finely chopped

1 medium anaheim or poblano chile pepper, finely chopped

1/2 - 1 jalapeno or serrano chille, finely chopped

2 cloves garlic, minced

1/3 C fresh cilantro, finely chopped

2-3 T lemon juice

1 tsp Celtic salt

 

Combine all ingredients in a large bowl. Cover and refrigerate to allow

the flavors to mix.
