Guest guest Posted November 22, 2001 Report Share Posted November 22, 2001 This is one I've just tried out this year and it's actually quite good - 1/4 kg (1/2 lb) sultanas 1/4 kg (1/2 lb) raisins 125g (1/4 lb) currants 1/4 litre (1/2 pint) sweet white wine 125g (1/4 lb) margarine 90g (3oz) raw demerara sugar 45ml (3tbs) molasses 1/4 kg (1/2 lb) 100%wholewheat flour 125ml (1/4 pint) soyal milk 2tbs mixed spice 1. Put dried fruit in bowl, pour wine over and leave to soak overnight - stir from time to time 2. Cream the margarine & sugar in a large mixing bowl. Stir in the molasses, flour, soya milk and mixed spice. 3. Fold in the soaked dried fruit & stir until evenly distributed through the mixture 4. Line a 9in (23cm)round cake tin with grease-proof paper. Pour in mixture and bake in a cool oven (150C, 300F, gas mark 2) for about 3 hours, until a knife inserted in the centre comes out cleanly. 5. Allow to cool on a rack before removing from tin I used plain white flour and an 8inch tin and it came out ok. Actually if you live in Britain, Asda are doing, said 8inch cake tin for 1pound and 93 pence - bargain at half the price, as they say...
