Guest guest Posted November 1, 2000 Report Share Posted November 1, 2000 * Exported from MasterCook II * Harvest Salad w/Cider Vinaigrette Recipe By : Southern Living 12/99 Serving Size : 6 Preparation Time :0:30 Categories : Entertaining Holidays Salads Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 red pears -- chopped 1 tablespoon lemon juice 3/4 cup dried apricots -- cut into thin strips 3/4 cup dried figs -- cut into thin strips 1/2 cup golden raisins 1 small purple onion -- thinly sliced 1 cup diced jicama CIDER VINAIGRETTE 6 ounces package fresh spinach leaves 1/2 cup coarsely chopped walnuts or pecans -- toasted 4 ounces package crumbled gorgonzola or blue cheese Toss together chopped pear and lemon juice in medium bowl. Add apricots and next five ingredients, tossing well. Chill 1 hour or overnight. Arrange spinach on individual plates; top evenly with pear mixture, and sprinkle with walnuts and cheese. CIDER VINAIGRETTE: 3 Tbsp cider vinegar, 1 garlic clove, pressed, 1 tsp Dijon mustard, 1/2 tsp sugar, 1/3 cup olive oil - Whisk together first four ingredients; gradually whisk in oil until blended.
