Guest guest Posted November 1, 2000 Report Share Posted November 1, 2000 * Exported from MasterCook II * Rosemary's Potatoes Recipe By : Southern Living 2/98 Serving Size : 4 Preparation Time :0:00 Categories : Potatoes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 medium onion -- thinly sliced 2 garlic cloves -- minced 1 tablespoon olive oil 4 cups peeled, diced potato 1 teaspoon seasoned salt 1/8 teaspoon freshly ground pepper 1/8 teaspoon grated lemon rind 1 cup (4 oz) shredded Cheddar cheese 1/4 cup fine, dry breadcrumbs 1 tablespoon butter -- melted 1 teaspoon chopped fresh rosemary Saute onion and garlic in hot oil in a large skillet until tender. Stir in potato and next three ingredients. Spoon half of mixture into a lightly greased 1 1/2 quart round baking dish; sprinkle with half of cheese. Repeat layers with remaining potato mixture and cheese. Stir together breadcrumbs, butter, and rosemary; sprinkle over top of potato-cheese mixture.
