Rosemary's Potatoes

Amount Measure Ingredient -- Preparation Method

1 medium onion -- thinly sliced

2 garlic cloves -- minced

1 tablespoon olive oil

4 cups peeled, diced potato

1 teaspoon seasoned salt

1/8 teaspoon freshly ground pepper

1/8 teaspoon grated lemon rind

1 cup (4 oz) shredded Cheddar cheese

1/4 cup fine, dry breadcrumbs

1 tablespoon butter -- melted

1 teaspoon chopped fresh rosemary

 

Saute onion and garlic in hot oil in a large skillet until tender.

Stir in potato and next three ingredients. Spoon half of mixture into

a lightly greased 1 1/2 quart round baking dish; sprinkle with half

of cheese. Repeat layers with remaining potato mixture and cheese.

 

Stir together breadcrumbs, butter, and rosemary; sprinkle over top of

potato-cheese mixture.

 

Bake, covered, at 400 degrees for 40 minutes; uncover and bake 20

more minutes or until potato is tender.
