Corn Sauteed With Mint And Shiitake Mushrooms

Amount Measure Ingredient -- Preparation Method

8 ounces shiitake or other wild mushrooms

2 tablespoons butter or margarine

6 ears fresh corn -- kernels from

OR 16-ounce bag frozen corn

3 tablespoons chopped fresh mint

1/2 teaspoon salt

Freshly ground pepper -- to taste

 

MAKES 6 SERVINGS

 

This side dish is flavorful, a bit exotic and quick to prepare.

 

Remove mushroom stems. Slice mushrooms; saute in butter or margarine over

medium heat about 2 minutes, or until limp. Add corn, mint, salt and

pepper; cook 3 more minutes, stirring. Serve immediately

 

Per Serving: 105 Calories; 3g Protein; 2g Fat; 23g Carbohydrates; 4mg

Cholesterol; 213mg Sodium; 1g Fiber.
