Since " spice cake mix " was not in MC's ingredients, I just linked it to " cake mix " which made the calories & fat higher than the nutritional info provided with the recipe (124 cal and 3 g fat). Karen * Exported from MasterCook * Postively Perfect Pumpkin Cupcakes Recipe By : Serving Size : 12 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- CUPCAKES: 1 box spice cake mix 1 cup canned pumpkin -- (NOT pumpkin pie filling) 1 cup unsweetened apple juice 1/2 cup Egg Beaters® 99% egg substitute 1 tsp. vanilla extract CREAM TOPPING: 1 8 oz container nonfat whipped topping 2 teaspoons ground nutmeg Preheat oven to 350 degrees F. Spray two 12-cup non-stick muffin tins with vegetable oil spray. In a large mixing bowl, combine all cupcake ingredients listed above. Using electric mixer, beat on low speed for 30 seconds, scraping sides with rubber spatula. Increase to medium speed and beat for two minutes, scraping sides. Fill muffin cups with equal amounts of batter. Bake for 20 minutes, or until a toothpick inserted in center of muffin comes out clean. Let cool for 15 minutes; remove cupcakes from muffin tins and let cool completely. Meanwhile, put whipped topping in a medium bowl. Using a rubber spatula, gently fold nutmeg into whipped topping. Cover and refrigerate until ready to use. When cupcakes are completely cool, frost with chilled topping. Each cupcake has 124 calories and 3 grams of fat.
