Guest guest Posted October 27, 2000 Report Share Posted October 27, 2000 * Exported from MasterCook * Scalloped Sweet Potatoes And Apples Recipe By : St. Paul Pioneer Press, 9/00 Serving Size : 6 Preparation Time :0:00 Categories : Fruits Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons butter 2 pounds sweet potatoes peeled and rough-cut into 1 1/2-inch pieces 1 large Granny Smith apple cored and cut into wedges (peeling is optional) 1 pear cored and peeled and sliced 1/2 cup fresh cranberries 1/4 teaspoon ground nutmeg 1/4 cup honey Makes 6-8 servings. Melt butter in a large skillet over medium heat. Add sweet potatoes and saute 10 minutes, stirring often. Add apple wedges, pear slices, cranberries, nutmeg and honey and stir to combine. Cover and cook sweet potato mixture 5 minutes. Remove cover and continue cooking 3-5 minutes or until sweet potatoes and apples are tender.
