Guest guest Posted October 25, 2000 Report Share Posted October 25, 2000 * Exported from MasterCook * Sauteed Zucchini With Onion Recipe By : St. Paul Pioneer Press, 9/8/00 Serving Size : 6 Preparation Time :0:00 Categories : Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tablespoons fruity olive oil 1 large onion -- peeled and coarsely chopped 3 pounds tender young zucchini -- trimmed and coarsely shredded 1/2 teaspoon dried leaf marjoram -- crumbled 1/2 teaspoon chopped fresh rosemary leaves OR 1/4 teaspoon dried leaf rosemary -- crumbled 1 teaspoon salt -- (or to taste) 1/4 teaspoon black pepper Makes 6 servings. A favorite recipe of Jean Anderson, author of ``The American Century Cookbook.'' Heat olive oil in large heavy skillet over moderate heat for 2 minutes. Add onion. Brown for 3 to 5 minutes. Add zucchini, marjoram, rosemary, salt and pepper. Saute, stirring often, for 5 minutes. Cover. Simmer for 5 minutes. Uncover.
