Black Bean Salsa Salad

Amount Measure Ingredient -- Preparation Method

2 cups corn kernels

3 cups cooked black beans -- drained

OR 2-15 ounce cans cook black beans -- drained

1 red bell pepper -- diced

1 red onion -- minced

2 jalapeño chiles -- minced

1 clove garlic -- minced

1 bunch cilantro -- minced

1 lime -- Juice of

1 teaspoon salt

1/2 teaspoon freshly ground pepper

5 tablespoons olive oil

5 tablespoons red wine vinegar

 

Serves 8.

 

Black beans with yellow corn and red bell pepper create a boldly colorful

marinated salad. Adjust the seasoning just before serving. See

In a 3-quart bowl, combine all ingredients. Chill for 1 to 24

hours. Taste and adjust seasoning, if needed, before serving.
