Guest guest Posted October 24, 2000 Report Share Posted October 24, 2000 * Exported from MasterCook * Black Bean Salsa Salad Recipe By : Star Tribune 10/1/00 Serving Size : 8 Preparation Time :0:00 Categories : Beans And Legumes Salads, Vegetable Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups corn kernels 3 cups cooked black beans -- drained OR 2-15 ounce cans cook black beans -- drained 1 red bell pepper -- diced 1 red onion -- minced 2 jalapeño chiles -- minced 1 clove garlic -- minced 1 bunch cilantro -- minced 1 lime -- Juice of 1 teaspoon salt 1/2 teaspoon freshly ground pepper 5 tablespoons olive oil 5 tablespoons red wine vinegar Serves 8. Black beans with yellow corn and red bell pepper create a boldly colorful marinated salad. Adjust the seasoning just before serving. See Mexican-style Black Beans recipe for directions on cooking beans. In a 3-quart bowl, combine all ingredients. Chill for 1 to 24 hours.
