Bavarian Vanilla Sauce

3 egg yolks

2 tablespoons sugar

2 tablespoons vanilla sugar

1 tablespoon cornstarch

1 1/2 cups milk

1 vanilla bean

 

Mix the yolks, sugar, vanilla sugar and cornstrach stirring

vigorously until smooth. Add tje milk, beating it with a whisk.

Slit the vanilla bean lenghtwise and scrape out the seeds to the egg

and milk mixture. Beat over mild heat until the sauce begins to

thicken--do not boil! Remove and discard the vanilla bean. Serve

immediately.
