Tofu Custard

4 eggs

1 pound very fresh soft soft tofu

1 cup honey

1/2 cup milk

1/4 teaspoon salt

1 tablespoon vanilla

1 teaspoon lemon juice

sprinkle nutmeg

 

Mix eggs, tofu, honey, milk, salt, vanilla, and lemon juice in a blender until

smooth.

 

Pour into either custard cups or a 2-quart casserole. Sprinkle wiith nutmeg.

Place the cups or casserole in a large pan. Pour water into the pan until it is

halfway up the sides of the custard dishes or casserole.

 

Bake custard cups at 350F for 25 to 35 minutes or until set. Bake the 2-quart

casserole at 350F for 45 minutes to 1 hour. Serve thoroughly chilled.
