Guest guest Posted October 20, 2000 Report Share Posted October 20, 2000 * Exported from MasterCook * Mushroom Stroganoff Recipe By :Estrogen, The Natural Way - Nina Shandler Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 ounces broad noodles 8 garlic cloves -- pressed 4 cups sliced mushrooms 2 tablespoons tamari soy sauce 2 teaspoons ground cumin 19 ounces silken tofu 1/2 cup soy milk 1 tablespoon tahini Bring 4 quarts of water to a boil. Add the noodles and cook for about 7 minutes (or according to package directions). While the noodles cook, make the sauce: Heat a heavy-bottomed frying pan over medium-high heat. Add 1/4 cup of water. Add the garlic and mushrooms. Cover. Place all of the remaining ingredients in a food processor with the S blade inserted. Process until the mixture is smooth and silky. Taste. If needed, add more tamari and cumin. When the mushrooms have darkened, pour the sauce from the processor into the frying pan. Heat without boiling. As soon as the noodles are cooked al dente, drain, rinse, and pour onto a serving platter. Serve the sauce and the noodles in separate serving bowls.
