Tofu Cheese Sauce

1/2 cup milk

12 ounces soft tofu

1/2 teaspoon salt

1/2 teaspoon dry mustard

1/4 teaspoon paprika

freshly ground pepper or a little cayenne

1 tablespoon butter or margarine

1 1/2 cups grated Cheddar cheese

1 tablespoon grated Parmesan cheese

 

Mix milk, tofu, salt, dry mustard, paprika, and pepper in a blender until

smooth. Melt butter in a large saucepan. Add tofu mixture. Add Cheddar and

Parmesan cheeses. Stir until the cheese has melted and the mixture is bubbly.
