Place the soy nuts in a mixing bowl. Stir in the maple syrup to coat the nuts evenly. Spread over a cookie sheet. Bake for 12 minutes, until the nuts are lightly toasted. Remove from the oven. Using a spatula, loosen from the cookie sheet while still warm. Cool. Store in the refrigerator. Variation: Mix in 1 teaspoon of your favorite spice - such as cinnamon or cardamon - before baking.
