Cinnamon-Molasses-Nut Bars

1 cup flax seed

1 tablespoon ground cinnamon

2 cups soy nuts

2/3 cup barley malt syrup

2 tablespoons blackstrap molasses

 

Grind the flaxseed in an electric coffee grinder 1/3 cup at a time. Pour into a

bowl. Add the cinnamon and soy nuts.

 

Pour the malt and molasses into a heavy-bottomed saucepan. When the mixture has

boiled for 1 minute (The trick to the texture is in the timing. If the malt and

molasses boil for less than a minute, the nuts will never form a bar. If they

boil for more than 3 minutes, you just might find the bar too brittle to bite.),

pour it over the flaxseed and soynuts. Mix thoroughly.

 

Pour into a 9 x 9-inch nonstick or oiled pan. Allow to cool. Cut into 8 bars.

Remove from the pan. Place in a storage container or in plastic sandwich bags.

Refrigerate.
