Guest guest Posted October 18, 2000 Report Share Posted October 18, 2000 * Exported from MasterCook * Chocolate Snack Bars Recipe By :Estrogen, The Natural Way - Nina Shandler Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup frozen apple juice concentrate 2 cups pitted dates 1 1/4 cups flax seed 3 tablespoons unsweetened cocoa powder 1/3 cup chocolate chips 1/3 cup chopped walnuts Place the apple juice concentrate and dates in a saucepan. Cover and cook over medium-high heat for 5 minutes, until softened. While the dates cook, grind the flaxseed in an electric coffee grinder 1/3 cup at a time. Pour the ground seeds into a food processor with the S blade inserted. Add the softened dried dates and cocoa powder. Process until the mixture is doughlike. If the mixture rises above the processor blades, shut off the machine and push the mixture down with a spatula. Then, turn the machine back on. When the dough is fully mixed, it will form a ball in the well of the food processor. Press half of the dough into a 9 x 9-inch nonstick pan. Sprinkle with chocolate chips and nuts. Press the remaining half of the dough oover the chips and nuts. Cut into 8 bars. Remove from the pan. Place in a storage container or in plastic sandwich bags. Refrigerate.
