Guest guest Posted October 18, 2000 Report Share Posted October 18, 2000 * Exported from MasterCook * Peanut Butter-Nut Bars Recipe By :Estrogen, The Natural Way - Nina Shandler Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup frozen apple juice concentrate 2 cups dried apples or apricots 1 1/4 cups flax seed 2 1/2 tablespoons peanut butter 1 cup whole soy nuts 3 tablespoons chopped soy nuts Place the apple juice concentrate and dried fruit in a saucepan. Cover and cook over medium-high heat for 5 minutes, until softened. While the fruit cooks, grind the flaxseed in an electric coffee grinder 1/3 cup at a time. Pour the ground seeds into a food processor with the S blade inserted. Add the softened dried fruit and the peanut butter. Process until the mixture is doughlike. If the mixture rises above the processor blades, shut off the machine and push the mixture down with a spatula. Then, turn the machine back on. When the dough is fully mixed, it will form a ball in the well of the food processor. Turn the dough into a bowl. Mix in the whole soy nuts. Sprinkle half of the chopped soy nuts over the bottom of a 9 x 9-inch nonstick pan. Press the dough into the pan. Sprinkle with remaining nuts. Cut into 8 bars. Remove from the pan. Place in a storage container or in plastic sandwich bags. Refrigerate.
