Crispy Rice Bars

3 cups crispy brown-rice cereal

1 cup flax seed

2/3 cup brown-rice syrup

 

Place the rice cereal in a medium-size mixing bowl. Grind the flaxseed in an

electric coffee grinder 1/3 cup at a time. Add to the bowl.

 

Pour the rice syrup into a heavy-bottomed saucepan. Cook over medium-high heat.

Boil for 1 minute. Place a spoon in the rice syrup. Slowly pour the syrup from

the spoon. When the drip solidifies in midair, the syrup is ready to use. Pour

it over the rice cereal and ground flaxseed. Mix thoroughly.

 

Pour the mixture into a 9 x 9-inch nonstick or oiled pan. Refrigerate until

cooled. Cut into 8 bars. Remove from the pan. Place in a storage container or

in plastic sandwich bags. Refrigerate.

 

Description:

" If the rice syrup boils for less than 1 minute, the rice cereal turns

soggy. If it boils for more than 2 minutes, the bars get hard. "
