Chili con Tofu

Amount Measure Ingredient -- Preparation Method

2 to 3 tablespoons oil

1 medium onion -- chopped

2 cloves garlic -- minced

2 16 oz cans tomatoes -- broken up

3 1/2 cups cooked kidney beans

1 1/4 cups bean liquor (or water)

2 teaspoons beef-flavored bouillon

2 teaspoons chili powder (or more to taste)

1/2 teaspoon cumin

3/4 teaspoon salt (or 1 1/4 tsp if the beans used have

not been salted)

1 bay leaf

1 teaspoon honey

2 pounds frozen firm tofu -- thawed, rinsed, squeezed dry, and

crumbled

 

Saute the onion and garlic in the oil in a soup or stock pot.

 

Add the remainder of ingredients and bring to a boil. Reduce heat, and simmer,

covered, for 1 hour.
