Peanut Crisps

1 cup flax seed

3 tablespoons peanut butter

2 cups soy nuts

1/2 cup barley malt syrup

 

The texture of the treat will depend on how long the barley malt boils. If it

boils for less than 1 minute, it will be sticky and shapeless. If it boils for

3 minutes, it will create a very hard brittle.

 

Grind the flaxseed in an electric coffee grinder 1/3 cup at a time. Pour into a

bowl. Add the peanut butter. Mix with a wooden spoon until thoroughly

combined. Stir in the soy nuts.

 

Pour the malt into a heavy-bottomed saucepan. Cook over medium-high heat.

Allow the malt to boil for 1 minute. Pour into the bowl with the flaxseed,

peanut butter, and soy nuts. Mix all of the ingredients completely.

 

Pour into a 9 x 9-inch nonstick or oiled pan. Allow to cool. Cut into 8 bars.

Remove from the pan. Place in a storage container or in plastic sandwich bags.

Refrigerate.
