Guest guest Posted October 17, 2000 Report Share Posted October 17, 2000 * Exported from MasterCook * Molasses-Apple-Nut Snack Bars Recipe By :Estrogen, The Natural Way - Nina Shandler Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 cup frozen apple juice concentrate 2 cups dried apples 1 cup flax seed 1 teaspoon blackstrap molasses 2 tablespoons ground cinnamon 2 teaspoons ground ginger 1 1/4 cups soy nuts Place the apple juice concentrate and dried apple rings in a sausepan. Cover and cook over medium-high heat for 5 minutes, until softened. While the apples cook, grind the flaxseed in an electric coffee grinder 1/3 cup at a time. Pour the ground seeds into a food processor with the S blade inserted. Add the molasses, cinnamon, and ginger to the food processor. By now the dried apples should be softened but should still retain their form. Add them to the food processor. Set aside 1/4 cup soynuts. Add 1 cup soynuts. Process until the mixture is doughlike and the apples are coarsely chopped. If the mixture rises above the processor bladed, shut off the machine and push the mixture down with a spatula. Then, turn the machine back on. Grind 2 tablespoons of the soy nuts in the coffee grinder and sprinkle half over the bottom of a 9 x 9-inch cake pan. Turn the dough into the pan and press flat with damp hands to cover the entire bottom of the pan evenly. Grind the remaining 2 tablespoons of the soynuts in the coffee grinder and sprinkle over the flattened dough. Cut into eight bars. Remove from the pan. Place in a stroage container or in plastic sandwich bags. Refrigerate. Description: " Flavored like gingerbread, these spicy delights have a chewy texture.
