To everyone - I've formatted about 70 recipes from this book. I really enjoy this book, my notes reflect the order the recipes appear in the book, so it begins with breakfast bars and ends with desserts. * Exported from MasterCook * Date-Nut Breakfast Bars Recipe By :Estrogen, The Natural Way - Nina Shandler Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 cup frozen apple juice concentrate 1 1/2 cups pitted dates 1 cup flax seed 1/2 cup chopped walnuts Place the apple juice concentrate and dates in a saucepan. Cover and cook over medium-high heat for 5 minutes, until softened. While the dates cook, grind the flax seed in an electric coffee grinder 1/3 cup at a time. Pour the ground seeds into a food processor with the S blade inserted. Add the dates. Process until the mixture is doughlike. If the mixture rises above the processor blades, shut off the machine and push the mixture down with a spatula. Then, turn the machine back on. Pour into a bowl and mix in the walnuts. Turn the dough into a 9 x 9-inch cake pan and press flat with damp hands to cover the entire bottom of the pan evenly. Cut into eight bars. (make three evenly spaced cuts in one direction and one in the other.) Remove fromm the pan. Place in a storage container or in plastic sandwich bags. Refrigerate.
