Typically multicourse meals of rich French food with fat-laden sauces, these dinners were as hard on the cook as on the heart. Today people want to entertain more simply and healthfully, and they enjoy serving guests food with more ethnic flavor. This menu fits that bill and is just one among many menus in this book that you could proudly serve to company. You may be eating a very low-fat vegetarian diet, but you can still entertain - and please - guests who aren't. The timing: Make the cake in the morning or several hours ahead, but don't frost it yet. About an hour and a half before dinnertime, frost the cake and make the soup. Stuff and bake the peppers. While they are baking, make the black bean sauce and prepare the chard for steaming. Reheat the soup and serve it as a first course.
