Spaghetti Sauce

Amount Measure Ingredient -- Preparation Method

2 tablespoons olive oil

1 large onion

4 large cloves garlic

1 pound soft tofu -- mashed well with a fork

1 15 oz can tomato sauce

1 28 oz can tomatoes

1 bay leaf

1 1/2 teaspoons Italian seasoning

OR 1 tsp. each of oregano, basil, and

thyme

1/4 teaspoon pepper

1 tablespoon vegetarian beef-flavored bouillon

1/2 cup sliced mushrooms -- (to 1 cup)

 

Saute olive oil, onion, and garlic for about 5 minutes. Add tofu, tomato sauce,

tomatoes, bay leaf, Italian seasoning, pepper, bouillon, and mushrooms. Bring

to a boil, reduce heat, and simmer, covered, for 30 minutes. Stir frequently.
