Guest guest Posted October 16, 2000 Report Share Posted October 16, 2000 * Exported from MasterCook * Tofu Tamale Pie Recipe By :Everyday Tofu - Gary Landgrebe Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tablespoons oil 1 onion -- chopped 1 medium bell pepper -- chopped 3 large garlic cloves -- minced 2 pounds soft tofu -- mashed well with a fork 2 16 oz cans tomatoes -- broken up 1 4 1/2 oz can chopped black olives 2 cups corn kernels 3/4 cup water 2 tablespoons chili powder 2 tablespoons beef-flavored bouillon 3/4 teaspoon salt 3/4 teaspoon garlic powder 1/2 teaspoon cumin 1/4 teaspoon pepper 1 cup cornmeal 8 ounces Monterey jack cheese -- thinly sliced Saute the onion, bell pepper, and garlic in the oil in a 5-quart pan. Remove from the heat. Stir in the tofu, tomatoes, black olives, corn, water, chili powder, bouillon, salt, garlic powder, cumin, pepper, and cornmeal. Bake at 350F for 45 minutes, remove from the oven.
