Silken Tofu Cheese Cake

Crust

1/4 cup graham cracker crumbs

Pie filling:

3/4 cup egg substitute

10 1/2 ounces silken tofu -- cubed

8 tablespoons sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 cup non-fat ricotta cheese

 

Preheat oven to 325F. Spray 8-inch springform pan with cooking spray. Coat the

bottom of the pan with crumbs. Blend remaining ingredients in food processor.

 

Pour into pan, bake for 40 minutes. Remove from oven and cool. Cut into 8

slices and top with your favorite fruit.
