Guest guest Posted October 16, 2000 Report Share Posted October 16, 2000 * Exported from MasterCook * Tofu Cutlets Parmesan Recipe By :Anne Liberty Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 chopped onion 2 cups tomato sauce 1 teaspoon garlic powder 1 teaspoon oregano 2 packages extra-firm tofu 1/2 cup egg substitute 3/4 cup seasoned bread crumbs 4 ounces reduced fat mozzarella cheese -- shredded 4 ounces Parmesan cheese -- grated Preheat oven to 350F. Coat a large skillet with nonstick cooking spray, then saute onion until wilted, about 3 minutes. Add tomato sauce and seasonings. Simmer 15 minutes. Meanwhile, slice each cake of tofu lengthwise into 3 pieces. Drain on paper towels. Heat a medium skillet. Dip each tofu slice in the egg substitute and coat with the bread crumbs. Fry until lightly brown - about 4 minutes. Line a baking pan with a little sauce, then layer in the cutlets, adding more sauce and cheeses between the layers, leaving some cheese for the top.
