Guest guest Posted October 15, 2000 Report Share Posted October 15, 2000 * Exported from MasterCook * White Bean Three-Tomato Chili Recipe By : The Vegetarian Chili Cookbook, by Robin Robertson, page 21 Serving Size : 6 Preparation Time :0:00 Categories : Beans And Legumes Soups And Stews Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon safflower oil 1 medium onion -- chopped 1 red bell pepper chopped 1 garlic clove -- minced 2 large ripe tomatoes -- diced 28 ounces canned Italian plum tomatoes -- chopped 3/4 cup oil-packed sun-dried tomatoes -- drained and chopped 4 tablespoons mild chili powder (see separate recipe) 2 cups water 3 cups cooked Great Northern beans Salt and fresh-ground black pepper -- to taste This recipe uses fresh, canned, and sun-dried tomatoes for a rich depth of flavor. Cannellini or navy beans are other white beans that may be used in place of Great Northern beans. Heat the oil in a large chili pot over medium heat. Add the onion, bell pepper, and garlic, cover, and cook until the onion is softened, about 5 minutes. Add the fresh tomatoes, canned tomatoes, sun-dried tomatoes, chili powder, water, beans and salt and pepper, lower the heat, and simmer about 30 minutes.
