Soy Milk Mashed Potatoes

4 medium boiling potatoes -- peeled

3 tablespoons soy margarine

1 teaspoon minced garlic

3/4 cup soy milk

 

Boil potatoes until a knife can be inserted easily though the center. Drain and

cool 15 minutes.

 

Return the potatoes to the pot and, with the burner on low, mash them thoroughly

and add the margarine, garlic, and soy milk (as needed), mashing to the

consistency you like. Stir.
