Chili Burgers

2 tablespoons vegetable oil

1 cup chopped onion

6 veggie burgers

1 tablespoon chili powder, commercial or homemade

6 burger rolls

6 slices cheddar or soy cheese

2 cups prepared chili -- warmed

salsa, as accompaniment

 

Heat the oil in a large skillet over medium heat. Add the onion, cover, and

cook until softened, about 5 minutes. Add the veggie burgers, and sprinkle each

with the chili powder. Cook until browned on both sides and heated through.

Set aside, and keep warm. Brown the rolls under the broiler, and arrange on

serving plates. Place each burger on half a roll, top with a cheese slice, and

spoon some chili over that. Cover each chili burger with the top of the roll,

and serve immediately, with salsa on the side.
