Just noticed that the Marinated Soybean Salad recipe I sent yesterday contains

honey - you could sub with rice syrup or Fruitsource liquid sweetener. I'll

try to be more careful on vegan Wednesday. And, Jennifer, cooked dry soybeans

taste very mild (at least to me) - I enjoy green soybeans, too!

Baked Soybeans

2 cups dry soybeans

1/2 cup chopped onion

1/4 cup packed brown sugar

1/4 cup mild mollasses

2 1/2 teaspoons salt

1 teaspoon dry mustard

 

Cook soybeans. Preheat oven to 325F. In a 2-quart casserole dish, combine the

cooked soybeans with the onion, brown sugar, molasses, salt, and dry mustard;

stir to mix. Bake covered for 3 hours.

 

Remove the cover during the last hour of cooking so the liquid can evaporate and

the top can brown.
