Guest guest Posted October 12, 2000 Report Share Posted October 12, 2000 * Exported from MasterCook * Great White Way Chili Recipe By :The Vegetarian Chili Cookbook - Robin Robertson Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons olive oil 1 large onion -- chopped 2 garlic cloves -- minced 1 teaspoon dried oregano, preferably Mexican 3/4 teaspoon ground cumin 2 4 oz cans green chiles -- diced 1/2 cup dry white wine 1 cup water 1 pound firm tofu -- crumbled 2 16 oz cans hominy -- rinsed and drained salt to taste Heat the oil in a large chili pot over medium heat. Add the onion and garlic, cover, and cook until softened, about 5 minutes. Add the oregano, cumin, chiles, white wine, and water. Bring to a boil, lower the heat, and simmer 15 miinutes. Add the tofu, hominy, and salt, and simmer 20 miutes longer, stirring occasionally. If the chili is too thick, add an additional cup of water.
