Guest guest Posted October 12, 2000 Report Share Posted October 12, 2000 * Exported from MasterCook * Louisiana Bayou Chili Recipe By : The Vegetarian Chili Cookbook, by Robin Robertson, page 47 Serving Size : 6 Preparation Time :0:00 Categories : Beans And Legumes Soups And Stews Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon safflower oil 1 cup chopped scallions 2 garlic cloves -- minced 3 tablespoons chili powder commercial or homemade (see separate recipes) 1 teaspoon dried thyme 1 teaspoon file powder 2 cups diced tomatoes -- fresh or canned 4 ounces diced green chiles 12 ounces cooked ground beef alternative -- see note 1 cup water 1 teaspoon Louisiana hot sauce 1/8 teaspoon cayenne Salt and fresh-ground black pepper -- to taste 3 cups cooked red beans File powder, which is made from ground sassafras leaves is an ingredient found in gumbos and other Creole dishes. It is available in most supermarkets and specialty food shops. Serve this chili over rice, with a bottle of hot sauce out on the table for those who like a little extra kick. Heat the oil in a large chili pot over medium heat. Add the scallions and garlic, and cook until the garlic is fragrant, about 2 minutes. Stir in the chili powder, thyme, and file powder. Add the tomatoes, chiles, ground beef alternative, and water. Bring to a boil, lower the heat, and simmer 10 minutes. Add the hot sauce, cayenne, salt and pepper, and red beans, and simmer 20 minutes longer to blend flavors, stirring occasionally. Taste, and adjust seasonings.
