Marinated Soybean Salad

Amount Measure Ingredient -- Preparation Method

1 to 1 1/2 cups dry soybeans

1/3 cup honey

1/3 cup vinegar

1 teaspoon salt

1/4 teaspoon crushed basil

1/8 teaspoon garlic powder

1/8 teaspoon white pepper

3/4 cup chopped green onions

1/2 cup chopped celery

2/3 cup chopped dill pickle

parsley for garnish

 

Cook soybeans. Drain. Combine honey, vinegar, salt, basil, garlic powder, and

white pepper in a bowl. Pour over soybeans. Add chopped green onion, celery,

and chopped pickles. Chill at least 4 hours before serving, stirring

occasionally. Garnish with parsley.

I just bought some of these and I can't wait to try this! I do have one

question though. What do dry soybeans taste like when reconstituted? I've

had endamame (I LOVE IT) and I was hoping it would kinda be like that.
